I've bean craving chilli for a while now. I fancied something heartier than regular chilli, so chucked in a few beans for a different texture and kick of flavour. Good one for vegetarians if you minus the meat and a good one for chilli nights in, geddit? (pun courtesy of my housemate Anna).
Dice the onion, garlic, pepper and chillies then fry in a pan on a medium heat. Next add the mince meat. Once cooked through, pour in the passata and half the stock. Add all the beans and bay leaves, then if you have time leave for an hour to simmer. After leaving to simmer, add in the rest of the stock if it's looking a wee bit dry. Serve up with a whole lotta' cheese, coriander and a handful of chips to dip.
