Dontcha just lurve Mexican food? Si? Si. Fajitas are the easiest thing to make. I think they may have been the first thing I made/cremated at uni. Making your own seasoning isn't tricky either if you've got some spices and blends hidden away at the back of the cupboard. So here's one for all the spice lovers!
Fajita seasoning
Salsa
Guacamole
Beginning with the fajita seasoning, add all the ingredients into a bowl and thoroughly mix. Mix in the chicken, making sure each piece is lovingly coated. Cover the bowl and leave in the fridge to marinate until ready to cook. Whip up some of my vodka salsa, which you can find here: http://bit.ly/1qDYMGd For the guacamole, smash the avocado and mix with the sour cream. Add the lime juice and garlic. Then add the chopped tomatoes. Chop up your peppers and onions. On a medium heat, brown your onions in a pan. Add your chicken to the pan and cook for 15-20 minutes. Give em' a flip. Cut one piece open to check it's cooked all the way through. Then place your chicken onto a serving board and put your veggies into the pan. I also threw in some leftover runner beans from the night before. The veggies can soak up the residual flavour. Cook for 3-5 minutes. Then serve with your guac, salsa, some grated cheese and sour cream. Mexican food is always a winner with me and fantastically easy to quickly rustle up. Good recipe for us poor uni students or for anyone watching the pennies.
